I absolutely love starting my mornings with a meal that's both energizing and incredibly tasty. This veggie breakfast sandwich with avocado has become my go-to. It’s a simple, fresh, and satisfying recipe that my whole family adores.

Ingredients
  

  • 8 slices of multigrain bread - A hearty seedy bread adds great texture and fiber.
  • 2 ripe avocados - Make sure they are soft to the touch for a creamy easy-to-mash spread.
  • 1 medium-sized tomato sliced - Use a ripe, firm tomato like a Roma or beefsteak for less water content.
  • 1 small cucumber sliced - This adds a wonderful, cool crunch to the sandwich.
  • 4 lettuce leaves - Crisp lettuce like romaine or iceberg works best for that fresh bite.
  • 8 slices of cheese - Cheddar is classic but Provolone or Swiss also melt beautifully.
  • 1 tablespoon olive oil - A drizzle adds a touch of healthy fat and rich flavor.
  • Salt and pepper to taste - Seasoning is essential to bring all the flavors together.
  • A dash of lemon juice optional - This helps keep the avocado mash from browning too quickly.

Method
 

  1. Begin by toasting the eight slices of multigrain bread until they reach a perfect golden-brown color. This step is crucial as it creates a sturdy base that prevents the sandwich from becoming soggy and adds a delightful crunch that contrasts with the soft fillings.
  2. While your bread is toasting, it’s time to make the creamy avocado spread. Cut the avocados in half, carefully remove the pits, and scoop the flesh into a medium-sized bowl. Use a fork to mash it to your desired consistency, adding a pinch of salt, pepper, and a little lemon juice.
  3. Once the bread is toasted, immediately place one slice of cheese on each piece. The residual heat from the toast will gently melt the cheese, creating a gooey, delicious layer that acts as a fantastic barrier and adds a savory richness to every single bite.
  4. Now for the fun part: assembly. Evenly spread the mashed avocado mixture over the cheese on four of the bread slices. Layer the sliced tomato, cucumber, and a lettuce leaf on top of the avocado. A light drizzle of olive oil enhances the flavors of the vegetables.
