Ingredients

  • 6 boneless skinless chicken thighs cut them into about 1-inch strips: Chicken thighs are more tender and juicy compared to chicken breasts, making them perfect for skewers.
  • 1/2 teaspoon salt: Helps enhance the flavor of the chicken.
  • 1 teaspoon garlic powder: Adds a savory depth to the marinade.
  • 1/2 teaspoon black pepper: A mild heat that balances the sauce flavors.
  • 1/2 teaspoon chili flakes: A touch of heat for a balanced spicy kick.
  • 1 tablespoon corn starch: Helps create a silky texture in the marinade.
  • 1 tablespoon of teriyaki sauce: Provides the rich umami flavor that’s essential for this dish.

Method

  1. In a mixing bowl, combine the salt, garlic powder, black pepper, chili flakes, corn starch, and teriyaki sauce. Mix all the ingredients together to create a smooth marinade. Add the chicken thighs that you’ve cut into strips into the marinade, making sure every piece is coated well. Cover the bowl and let the chicken marinate for at least 30 minutes or longer if possible. The longer the chicken marinates, the more flavor it absorbs.
  2. While the chicken marinates, prepare the teriyaki sauce. In a separate mixing bowl, whisk together the chicken broth, soy sauce, brown sugar, honey, garlic paste, ginger paste, rice vinegar, sesame oil, and corn starch. Whisk until smooth and well combined. This sauce will thicken as it cooks, creating a perfect glaze for your skewers.
  3. After the chicken has marinated, heat two tablespoons of oil in a frying pan over medium-high heat. Once hot, add the chicken strips, making sure not to overcrowd the pan. Fry the chicken for about 5-7 minutes on each side or until they are golden brown and cooked through. Alternatively, you can grill the chicken skewers for 5-7 minutes per side, depending on the thickness of the chicken.
  4. While the chicken cooks, transfer the teriyaki sauce mixture to a small saucepan. Bring it to a simmer over medium heat. Stir occasionally to prevent it from burning. Let it simmer for about 5-7 minutes or until it thickens into a glaze-like consistency.
  5. Once the chicken is cooked, drizzle the teriyaki glaze over the skewers. You can also toss the chicken in the sauce for an even coating. For extra flavor, you can sprinkle some sesame seeds or chopped green onions on top before serving.
