Taco Bell Beefy Melt Burrito Recipe

I’ve always loved Taco Bells Beefy Melt Burrito, but after trying this homemade version, I realized it’s even better than the drive-thru original. The combination of seasoned beef, creamy beans, crunchy chips, and melty cheese is irresistible. Making it at home means I can customize every ingredient and make it exactly how I like.

Ingredients
  

  • Ground beef 1 lb: Use lean ground beef to avoid excess grease; it cooks quickly and stays juicy.
  • Taco seasoning 2 tbsp: Store-bought is convenient, but homemade works too for extra flavor.
  • Water or beef broth 1/4 cup: Adds moisture to the beef and seasoning mix.
  • Refried beans 1 cup: Canned beans are easy, but homemade gives a fresher taste.
  • Mexican rice 1 cup, cooked: Leftover rice works well; it absorbs flavors without getting mushy.
  • Large flour tortillas 4-6: Over 10 inches works best to hold all the fillings.
  • Fritos corn chips 1 cup: Adds a signature crunch; Doritos or other tortilla chips work too.
  • Cheese dip 1/2 cup, warm: Use your favorite brand, orange or white nacho cheese both work.
  • Shredded Mexican cheese blend 1 cup: Freshly grated melts better and gives richer flavor.
  • Sour cream 1/4 cup: Full-fat is creamy, but light works for a healthier version.
  • Salsa optional, 1/4 cup: Adds tang and spice if you like it.

Method
 

  1. Start by browning the ground beef in a skillet over medium heat. Add taco seasoning and water or broth, then simmer until fully cooked and flavorful.
  2. Warm the refried beans and Mexican rice. Stir the beans into the beef mixture for a creamy consistency, while keeping the rice separate to layer in the burrito.
  3. Lay out the tortillas and start layering rice, beef-bean mixture, Fritos, shredded cheese, cheese dip, sour cream, and salsa if using. Fold the sides, then roll tightly to form each burrito.
  4. Place the assembled burritos in a skillet or oven for 2–3 minutes to warm through and melt the cheese. Serve immediately for best texture

Notes

  • I always toast the tortillas lightly before filling to prevent sogginess.
  • I like adding extra Fritos right before serving to keep the crunch.
  • I sometimes mix a little garlic powder into the beef for a subtle flavor boost.
  • I recommend using fresh grated cheese rather than pre-shredded for better meltability.
