Summer Peach Fruit Salad Recipe

I have to tell you, making this Summer Peach Fruit Salad has become my absolute favorite summer tradition. After years of experimenting with different fruit combinations, I finally found the perfect balance of sweet peaches, tart berries, and that amazing citrus dressing that ties everything together.

Ingredients
  

  • 2 large ripe peaches - Look for peaches that give slightly when pressed and have a sweet aroma. The ripeness makes all the difference in flavor
  • 16 ounces fresh strawberries - Hull and slice thinly. Fresh strawberries provide the perfect tartness to balance the sweet peaches
  • 6 ounces fresh blueberries - These little gems add bursts of flavor and beautiful color contrast
  • 6 ounces fresh blackberries - Choose plump dark berries without any mushy spots for best results
  • 2 tablespoons honey - Use raw honey if possible for the best flavor in your dressing
  • 1-2 clementines - You'll need 1/2 teaspoon zest and 1 tablespoon juice for that bright citrus kick
  • 1 large lemon - Fresh lemon zest and juice are essential - bottled just won't cut it here
  • 1/4 teaspoon vanilla extract - This optional ingredient adds unexpected depth to the dressing
  • 8-10 fresh mint leaves - Adds a refreshing finish but basil works beautifully too

Method
 

  1. Start by making the dressing that will bring all the flavors together beautifully. Add the honey, citrus zests, fresh lemon and clementine juices, and vanilla extract to your mason jar.
  2. Secure the lid tightly and shake vigorously for about 30 seconds until everything is well combined. The honey should dissolve completely into the citrus juices, creating a smooth, golden dressing that will coat the fruit perfectly.
  3. Wash all your fruit thoroughly under cold running water and pat completely dry with paper towels. Hull the strawberries and slice them into thin, uniform pieces - about 1/4 inch thick works perfectly.
  4. Remove the pits from your peaches and slice them into similar-sized pieces, leaving the skin on for extra nutrition and color. Check your berries carefully, removing any stems from blueberries and discarding any soft or damaged pieces.
  5. Place all the prepared fruit in your large mixing bowl, starting with the firmer fruits like peaches first, then adding the berries on top. Drizzle the citrus dressing over the fruit mixture, starting with just half and adding more as needed.
  6. Using clean hands or a large spoon, gently fold the fruit together, being careful not to crush the delicate berries while ensuring everything gets coated with that delicious dressing.
  7. Finely chop or tear the fresh mint leaves and sprinkle them over the salad just before serving. This adds a beautiful pop of green color and that refreshing aroma that makes this salad so special.
  8. Give everything one final gentle toss and taste - you might want to add a touch more honey if your fruit is particularly tart, or a squeeze of extra lemon for more brightness.
