Ingredients

  • 1/3 cup soy sauce
  • 1/3 cup lemon juice
  • 1/2 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon minced garlic
  • 2 tablespoons Italian seasoning
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 pinch red pepper flakes optional
  • Desired steak cuts 4 pounds total

Method

  1. Begin by adding soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, black pepper, salt, and red pepper flakes to a mixing bowl. Whisk the ingredients until the mixture is smooth and well-emulsified. Each ingredient has a role here, from the tangy lemon to the savory Worcestershire sauce, blending together for that ideal balance of flavor.
  2. Place your steak cuts in a zip-top bag or a shallow dish. Pour the marinade over the steak, ensuring every inch is well-coated. Seal the bag or cover the dish with cling wrap. Toss it in the fridge and allow the steak to marinate for at least two hours. For the best possible flavor, leave it to marinate overnight.
  3. When ready to cook, take the steak out of the fridge and allow it to come to room temperature for about 20 minutes. Heat your grill or skillet on high to ensure you achieve a proper sear. A hot surface is critical for creating that beautiful crust while keeping the inside juicy.
  4. Lay your marinated steak onto the hot skillet or grill. Cook each side for about 3 minutes for a rare steak or longer depending on your preference. Flip the steak only once using tongs to prevent losing the juices. Adjust the heat to medium-high to finish cooking until your desired doneness is reached.
  5. Once cooked, remove the steak from the heat and loosely cover it with foil. Rest it for 5-10 minutes before slicing. This allows the juices to redistribute throughout the meat, keeping every bite tender and succulent. Make sure to slice against the grain for maximum tenderness.
