Ingredients
  

  • 1 lb ground beef – lean beef is best for less grease and a richer meat flavor
  • 1 can 15 oz sloppy joe sauce – gives a classic sweet and tangy base, no need to make sauce from scratch
  • 1 can 15 oz corn, drained – adds a pop of sweetness and texture
  • 1 can 16.3 oz refrigerated biscuit dough – quick and easy topping that bakes golden and fluffy
  • 1 cup shredded cheddar cheese – fresh shredded melts better than pre-bagged
  • 1/2 cup chopped onion – yellow or white onions add sweetness and depth
  • 1/4 cup chopped green bell pepper – gives crunch and color
  • 1/4 cup chopped red bell pepper – adds sweetness and balance to the green pepper
  • 1 tablespoon olive oil – helps sauté the vegetables evenly
  • Salt and pepper to taste – brings out the flavor of the meat and sauce

Method
 

  1. Start by preheating your oven to 375°F (190°C). In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions, green bell pepper, and red bell pepper. Sauté them for about 5 minutes, or until the vegetables are soft and fragrant. This step adds flavor and softens the texture.
  2. Next, add the ground beef to the skillet with the vegetables. Break it apart with a spoon and cook until fully browned, around 7–10 minutes. Drain off any extra fat to keep the casserole from becoming greasy. The browned beef will absorb more flavor from the sauce, so make sure it’s fully cooked and crumbly.
  3. Once the beef is ready, stir in the sloppy joe sauce and drained corn. Cook the mixture for another 2–3 minutes until everything is evenly combined and heated through. Season with salt and pepper according to taste. This is your rich, saucy base that forms the heart of the casserole.
  4. Transfer the meat mixture into a greased 9x13-inch baking dish. Open the biscuit dough and cut each biscuit into quarters. Arrange these biscuit pieces evenly over the top of the meat mixture. This layer will puff up and turn golden during baking, forming a delicious crust.
  5. Place the casserole in the oven and bake for 25 minutes, or until the biscuits are golden brown and cooked through. Carefully remove the dish from the oven and sprinkle shredded cheddar cheese all over the top. Return the casserole to the oven for another 5 minutes, just until the cheese melts beautifully.
  6. Take the casserole out and let it cool for a few minutes before serving. This helps the flavors settle and makes it easier to scoop. Serve warm, and enjoy with a fresh salad or simple green veggie on the side if you like.
