Sesame Garlic Ramen Noodles Recipe

I have to admit, I grew up eating those classic instant ramen packs straight from the pantry. But as I got older, I realized there’s a much better way to enjoy ramen without drowning it in sodium. That’s when I started experimenting with a simple, flavorful homemade sauce that turns basic noodles into something extraordinary.

Ingredients
  

  • 2 packets 3 ounces each of ramen noodles, seasoning packets discarded – using plain noodles allows full control over flavor.
  • 2 teaspoons sesame oil – gives a rich nutty depth; I prefer toasted sesame oil for extra aroma.
  • 2 cloves garlic minced – fresh garlic adds a sharp, robust flavor that dried just can’t match.
  • 1/4 cup soy sauce low sodium recommended – balances saltiness while letting other flavors shine.
  • 1 teaspoon brown sugar – adds a subtle sweetness to counter the garlic’s punch.
  • 2 teaspoons sriracha – for mild heat; adjust according to taste preferences.

Method
 

  1. Boil your ramen noodles according to the package instructions, but skip the seasoning packets. Once cooked, drain the noodles and set them aside. I like to rinse them briefly under warm water to prevent sticking.
  2. While the noodles cook, heat sesame oil in a small skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant, careful not to burn it. This step infuses the oil with garlic flavor.
  3. Remove the skillet from heat, then whisk in soy sauce, brown sugar, and sriracha. Stir until fully combined into a glossy, flavorful sauce. You can taste and adjust spice levels here.
  4. Add the drained noodles to the skillet or transfer the sauce to a large bowl. Toss until noodles are evenly coated. I like to drizzle a little extra sesame oil on top for more aroma.
  5. Top with green onions, sesame seeds, or crushed peanuts for crunch. Serve immediately while warm. The garnishes really elevate the dish’s presentation.

Notes

  • I always use fresh garlic—it makes a huge flavor difference.
  • Toast the sesame seeds before adding; it enhances their nuttiness.
  • Don’t overcook the noodles; slightly firm noodles absorb sauce better.
  • If you like a little extra heat, add chili flakes in addition to sriracha.
  • For a richer texture, drizzle a tiny bit of sesame oil after tossing the noodles.
