Ingredients
  

  • 1 tablespoon olive oil
  • ½ cup yellow onion diced
  • 3 cups rotisserie chicken shredded
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon coriander
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • ½ cup low-sodium chicken broth
  • Juice of 1 lime
  • 14 ounces canned black beans rinsed and warmed
  • 12 small flour or corn tortillas
  • Optional toppings adjust to your taste:
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado
  • Chopped cilantro
  • Diced red onion
  • Shredded cheese cheddar or a Mexican blend
  • Sour cream or Greek yogurt

Method
 

  1. Start by heating olive oil in a skillet over medium heat. Once hot, toss in the diced onion and sauté for about 3 minutes until it softens. The aroma of sizzling onions sets the stage for the deliciousness to come.
  2. Add the shredded rotisserie chicken to the skillet, spreading it evenly. Sprinkle the cumin, paprika, coriander, oregano, salt, and pepper over the chicken. Stir everything together, ensuring the seasonings coat the chicken thoroughly. This quick sauté enhances the flavor with warm, smoky spices.
  3. Mix the tomato paste into the skillet, followed by the chicken broth. Stir well to combine, then bring the mixture to a simmer. Lower the heat and cook for about 5 minutes until most of the liquid is reduced, leaving a tender and flavorful taco filling.
  4. Squeeze fresh lime juice over the chicken mixture, giving it a bright, zesty pop! Taste and adjust the seasonings if needed. While the chicken cools slightly, warm your tortillas.
  5. Place each toasted tortilla flat and scoop some chicken mixture onto the center. Add warmed black beans and all your favorite toppings—from creamy avocado slices to crunchy lettuce and tangy salsa. Fold the tortillas after filling them up, and your tacos are ready to enjoy!
