Ingredients

  • 2 cups shredded rotisserie chicken
  • ¼ cup red onion finely chopped
  • ½ cup celery finely chopped
  • ½ cup avocado oil mayo
  • 1 tablespoon dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Method

  1. Before mixing anything, gather all the ingredients and prepare them. Shred the rotisserie chicken into bite-sized pieces by hand or with a fork. Finely chop the red onion and celery for a nice crunch in every bite.
  2. Take a large mixing bowl and add the shredded chicken. Toss in the chopped onion and celery. These vegetables are essential for texture and a hint of freshness that elevates the salad.
  3. Next, spoon in the avocado oil mayo and dijon mustard. Sprinkle in the salt and pepper, then gently stir everything together. Make sure the chicken and vegetables are evenly coated with the creamy dressing.
  4. Taste-test the salad and adjust the seasoning if needed. You might want to add a bit more salt, pepper, or even an extra squeeze of dijon mustard for more tanginess.
  5. Once mixed, you can serve the salad immediately or refrigerate it for about 30 minutes to allow the flavors to meld. Serve it chilled for a refreshing and delightful meal.
