Rotisserie Chicken Lettuce Wraps Recipe

I love how quick and simple these rotisserie chicken lettuce wraps are to prepare! The first time I tried this recipe, I was amazed by how fresh and flavorful it turned out. Using rotisserie chicken as the base not only saved me time but also made the dish wonderfully juicy and tender.

Ingredients
  

  • For the Peanut Sauce:
  • 1 tablespoon creamy unsweetened peanut butter
  • 1 tablespoon sriracha
  • 2 tablespoons lime juice
  • 1 tablespoon coconut aminos
  • 1 teaspoon fish sauce
  • For the Wraps:
  • 4 cups shredded rotisserie chicken about 1 whole chicken
  • 1 small red bell pepper thinly sliced
  • 4 green onions halved and sliced into 2-inch pieces
  • 1 large head of radicchio torn into leaves (or substitute with iceberg or butter lettuce)
  • 1 lime cut into wedges
  • ¼ cup chopped roasted peanuts
  • Fresh cilantro for garnish

Method
 

  1. Start by whisking together peanut butter, sriracha, lime juice, coconut aminos, and fish sauce in a small bowl. Stir rigorously until it becomes silky and smooth. This sauce will act as the flavor-packed drizzle that ties all the wrap ingredients together.
  2. While the sauce is settling, shred the rotisserie chicken into bite-sized pieces. Slice your red bell pepper and green onions finely. For the lettuce base, arrange the radicchio or your choice of leaves on a platter, keeping the larger leaves intact for wrapping.
  3. Once all your ingredients are ready, it’s time to build the wraps. Place a generous portion of shredded chicken into each lettuce cup, followed by red bell pepper slices and green onions. Drizzle the peanut sauce over the top or serve it on the side for dipping. Sprinkle some roasted peanuts and fresh cilantro for added crunch and a burst of freshness.
  4. Arrange the lettuce wraps neatly on your serving platter with lime wedges on the side. Encourage your guests to squeeze fresh lime juice onto their wraps for a pop of zesty flavor just before taking a bite.
