Rotisserie Chicken Fajitas Recipe

The first time I made rotisserie chicken fajitas, I was blown away by how easy and flavorful they turned out! Using a store-bought rotisserie chicken was a game changer, and the way it paired with sautéed veggies and bold seasonings made it feel like a restaurant-worthy meal.

Ingredients
  

  • 1 red onion sliced into strips
  • 1 red bell pepper sliced into strips
  • 1 green bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 1 zucchini thinly sliced into rings
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 14.5 oz can diced tomatoes
  • 3 cups rotisserie chicken shredded or chopped
  • 3 tablespoons taco seasoning
  • 2 tablespoons garlic seasoning or an additional 2 tablespoons taco seasoning
  • 1 teaspoon liquid smoke
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • Salt and pepper to taste

Method
 

  1. Start by cutting the red onion, bell peppers, and zucchini into thin slices. Make sure all the veggies are evenly sized so they cook at the same pace. Prepping everything before you start cooking will make the process smoother.
  2. Heat your skillet over medium-high heat and add the olive oil. Once the oil is hot, toss in the veggies and sauté them for about 5 minutes. They should be tender but still have a little crunch to them. This step adds a depth of flavor to the fajitas while keeping the veggies fresh and colorful.
  3. Stir in the diced tomatoes and garlic, letting their juices coat the veggies. Cook for another 2 minutes as the flavors begin to meld together. You’ll notice the aroma getting richer, setting the stage for a bold and savory filling.
  4. Add the shredded rotisserie chicken to the skillet, followed by taco seasoning, garlic seasoning, liquid smoke, lime juice, and honey. Stir everything together so the chicken and veggies are well-coated in the flavorful blend. Allow it to simmer for about 10 minutes, giving the spices time to infuse the chicken.
  5. Taste the fajita mixture and add salt or pepper as needed. Serve the sizzling fajitas straight from the pan along with warm tortillas and your choice of toppings for a meal that feels like a fiesta!
