Rotisserie Chicken and Broccoli Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 medium head of broccoli cut into florets
  • 1 rotisserie chicken shredded
  • 3/4 cup chicken or bone broth
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes

Method
 

  1. Start by heating a large skillet over medium heat and adding the butter. Once melted, toss in the finely diced onion and minced garlic. Sauté them for about 4 minutes, stirring occasionally, until they are soft and fragrant. This creates the base of the dish and boosts the flavor right from the start.
  2. Next, add the broccoli florets to the skillet and pour in the chicken broth. Gently mix in the shredded rotisserie chicken. Season the mixture with salt, pepper, and, if you like a little heat, some red pepper flakes. Lower the heat just a touch, cover the pan, and allow the dish to simmer and steam for 10-12 minutes. The broccoli will turn vibrant green and tender.
  3. Remove the lid and sprinkle the shredded cheddar cheese evenly over the mixture. Cover the skillet again to allow the cheese to melt completely, about 2-3 minutes. This melted cheesy layer is what makes the dish irresistible. The final touch ties all the flavors together beautifully.
  4. Give everything a gentle stir to incorporate the cheesy goodness throughout. Serve it warm straight from the skillet. Whether you enjoy it as is or pair it with a side, every bite is brimming with flavor and satisfaction.
