Rotel Cream Cheese Beef Sausage Balls Recipe

I have to admit, I fell in love with these Rotel Cream Cheese Beef Sausage Balls the first time I made them. They are cheesy, spicy, and packed with flavor in every bite. I love how easy they are to make and how perfectly they serve as an appetizer or snack

Ingredients
  

  • 1 lb ground beef sausage – I prefer using fresh sausage for the best flavor.
  • 8 oz cream cheese – softened to room temperature so it mixes easily.
  • 1 cup shredded cheddar cheese – freshly shredded gives a richer taste.
  • 1 can 10 oz Rotel diced tomatoes and green chilies – adds a spicy, tangy kick.
  • 1/4 cup breadcrumbs – helps bind the mixture and gives a slight crunch.
  • 1/2 tsp garlic powder – for a subtle aromatic flavor.
  • 1/2 tsp onion powder – enhances the savory taste.
  • Salt and pepper – adjust to your taste.

Method
 

  1. Start by softening your cream cheese and shredding the cheddar cheese. Open your Rotel tomatoes and drain slightly if needed. Pre-measure spices for easy mixing.
  2. In a large mixing bowl, combine ground beef sausage, cream cheese, cheddar, Rotel, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until fully combined.
  3. Use your hands or a small cookie scoop to form bite-sized balls. Aim for uniform size so they cook evenly. Place them on a parchment-lined baking sheet.
  4. Preheat your oven to 375°F (190°C). Bake the sausage balls for 20-25 minutes or until golden brown and fully cooked inside.
  5. Allow the sausage balls to cool slightly before serving. You can also chill them for later use. They hold together well and stay flavorful.

Notes

  • I always soften the cream cheese first; it makes mixing so much easier.
  • I like to slightly brown the sausage balls before baking to add extra texture.
  • If I want a spicier version, I add a pinch of cayenne powder to the mix.
  • Using freshly shredded cheddar always makes the cheese flavor pop more.
