Raspberry Lemonade Popsicles Recipe

I made these Raspberry Lemonade Popsicles on a hot afternoon and instantly fell in love with how bright and refreshing they tasted. The tart lemon paired with sweet raspberries had my whole family asking for seconds.

Ingredients
  

  • ¼ cup lemon juice — freshly squeezed lemon juice gives the popsicles a bright tangy flavor; bottled juice can taste flat and overly acidic.
  • ¼ cup sugar — balances the sharpness of the lemon and enhances the natural sweetness of the raspberries; adjust slightly based on taste.
  • cups water — lightens the lemonade base and keeps the popsicles icy and refreshing rather than dense.
  • ½ cup raspberries fresh or frozen — adds natural sweetness, vibrant color, and a fruity burst in every bite; fresh hold their shape better, but frozen work well too.

Method
 

  1. I started by mixing the lemon juice, sugar, and water in a bowl. Stirring until the sugar fully dissolved helped create a smooth and balanced lemonade flavor.
  2. Next, I placed a few raspberries into each popsicle mold. They add texture, natural sweetness, and a beautiful pop of color once frozen.
  3. I poured the lemonade mixture over the raspberries, leaving a little space at the top. After inserting the sticks, I froze them until completely solid before serving.

Notes

  • I soak wooden popsicle sticks in water first so they freeze securely.
  • Freezing the mixture for one hour before adding sticks helps keep them centered.
  • If you prefer smoother popsicles, I lightly mash or blend the raspberries.
  • I always taste the lemonade before freezing and adjust sweetness if needed.
