Quiche Stuffed Bagels recipe

When I first made these quiche-stuffed bagels, I couldn’t believe how easy and delicious they turned out. Inspired by my love for bagels and my grandma’s Sunday quiches, this recipe combines the best of both worlds.

Ingredients
  

  • 4 large bagels plain or everything bagels work best for this recipe
  • 4 large eggs fresh eggs give the best texture
  • 1/2 cup milk whole milk adds creaminess, but you can use alternatives
  • 1/2 cup shredded cheddar cheese grate it fresh for better melting
  • 1/4 cup diced cooked bacon optional, but adds a smoky flavor
  • 1/4 cup chopped spinach use fresh, not frozen, for better texture
  • 1/4 cup diced red bell pepper adds a sweet crunch
  • 2 tablespoons finely chopped green onions for a mild oniony kick
  • Salt and pepper to taste
  • A pinch of smoked paprika optional, for a hint of smokiness

Method
 

  1. Start by preheating your oven to 350°F (175°C). Slice the tops off the bagels, about 1/3 of the way down, and gently hollow out the centers. Be careful to leave a 1/2-inch thick wall and avoid tearing the bottom.
  2. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and smoked paprika. Once combined, stir in the shredded cheese, cooked bacon, spinach, bell pepper, and green onions. This mixture will be the heart of your stuffed bagels.
  3. Line a baking tray with parchment paper and arrange the hollowed-out bagels on it. Carefully pour the quiche mixture into each bagel cavity, filling them almost to the top. Don’t overfill to avoid spills during baking.
  4. Bake the bagels in the preheated oven for 25–30 minutes, or until the egg mixture is set and slightly golden on top. Let them cool for a few minutes before serving to allow the filling to set.
