Pumpkin Whipped Feta Dip Recipe

I have to admit, I was instantly smitten the first time I made this pumpkin whipped feta dip. The creamy, tangy feta blends perfectly with the subtle sweetness of pumpkin, creating a flavor that’s both seasonal and irresistible. Adding a drizzle of honey, a sprinkle of walnuts, and fresh thyme takes it to the next level.

Ingredients
  

  • Feta cheese – 8 ounces crumbled. I recommend using full-fat feta for the creamiest texture.
  • Plain Greek yogurt – 2 tablespoons. Adds a slight tang and makes the dip lighter.
  • Pumpkin puree – 1/2 cup preferably canned for smooth consistency. Avoid pumpkin pie filling since it contains added sugar and spices.
  • Honey – 2 teaspoons for a natural sweetness that complements the feta.
  • Fresh thyme – 1 teaspoon finely chopped. You can use dried thyme if fresh isn’t available, but fresh brightens the dish.
  • Raw walnuts – 2 tablespoons chopped. Optional, but adds a satisfying crunch

Method
 

  1. Gather all your ingredients and measure them precisely. Crumble the feta and chop the walnuts and thyme. Having everything ready makes the blending process smooth and fast.
  2. In a food processor, combine feta, Greek yogurt, and pumpkin puree. Blend until smooth and fluffy. Scrape down the sides to ensure an even texture.
  3. Add honey and fresh thyme, then pulse briefly to mix. Taste and adjust sweetness or seasoning if needed. The dip should be creamy, slightly sweet, and flavorful.
  4. Transfer the dip to a bowl and chill for at least 30 minutes. Chilling firms up the dip and lets the flavors meld together beautifully.
  5. Before serving, top with chopped walnuts, a drizzle of honey, and a few sprigs of thyme. It looks stunning on a platter and adds extra texture and flavor.

Notes

  • I always use full-fat feta for a richer, creamier dip.
  • Chilling the dip is key; it improves texture and flavor.
  • Toasting walnuts lightly enhances their nutty flavor.
  • If I’m in a hurry, I skip the thyme, but fresh herbs really elevate the dish.
