Ingredients
  

  • 1 head garlic – roasting brings out a sweet mellow flavor.
  • Extra virgin olive oil – for roasting garlic and adding depth.
  • Dinner rolls homemade or King’s Hawaiian – soft rolls work best; they soak up flavors without falling apart.
  • Marinara sauce – choose a high-quality sauce for the best taste.
  • Shredded mozzarella cheese – use fresh never pre-shredded for the best melt.
  • Shredded provolone cheese – adds a smoky melty layer.
  • Grated parmesan cheese – sprinkle on top for an umami boost.
  • Thinly sliced pepperoni – opt for quality slices for better flavor.
  • Salted butter – forms the base of the roasted garlic butter.
  • Chopped fresh sage – adds an earthy note.
  • Dried basil – for classic pizza flavor.
  • Dried oregano – enhances the Italian flavor profile.
  • Dried parsley – adds a fresh herbal touch.
  • Chili flakes – optional for a bit of heat.

Method
 

  1. Start by slicing the top off your garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast at 400°F for about 40 minutes until golden and soft. Roasted garlic adds a sweet, savory depth to the butter topping.
  2. Slice your soft dinner rolls in half lengthwise. Layer on marinara sauce, mozzarella, provolone, and pepperoni. Sprinkle a little parmesan on top and place the top halves of the rolls back. This creates the gooey, cheesy core of your sliders.
  3. Mash the roasted garlic and mix with butter, sage, dried basil, oregano, parsley, chili flakes, and a pinch of parmesan. Spread this butter generously over the rolls, making sure it seeps into every nook and cranny.
  4. Wrap the prepared rolls in foil and bake at 375°F for 15–20 minutes. The cheese will bubble, and the garlic butter will melt perfectly, giving the sliders a golden, flavorful crust.

Notes

  • I always roast extra garlic – it’s addictive and makes the butter more flavorful.
  • Use fresh herbs when possible; dried herbs are fine, but fresh gives a brighter taste.
