Spread butter evenly on one side of each bread slice. This helps achieve that golden, crispy crust. You can also use mayonnaise for an extra crunchy exterior if you prefer.
Place one slice of bread butter-side down on a clean surface. Layer the cheese slices evenly, then add the pickles on top. Finish with another layer of cheese and top with the second slice of bread, butter-side facing out.
Heat a skillet over medium-low heat and place the sandwich in the pan. Cook slowly to allow the cheese to melt while the bread turns golden brown. Press lightly with a spatula for even cooking.
