Ingredients
  

  • 1/2 cup rolled oats - Use old-fashioned rolled oats for the best chewy creamy texture. Instant oats can become too mushy.
  • 1/2 cup almond milk - Or any milk of your choice! Almond milk adds a subtle nutty flavor that pairs well with the other ingredients.
  • 1/2 ripe banana mashed - A very ripe banana is key here, as it provides natural sweetness and a smooth, creamy consistency.
  • 2 tablespoons peanut butter - Creamy peanut butter integrates best but crunchy works if you want extra texture. Choose a natural variety for less added sugar.
  • 1 tablespoon chia seeds - These little seeds are powerhouses! They absorb liquid helping to thicken the oats and adding a pudding-like texture.
  • 1 tablespoon honey - This is optional for extra sweetness. You can also use maple syrup or agave nectar.
  • 1/4 teaspoon vanilla extract - A small amount enhances all the other flavors in the recipe.
  • 1/4 teaspoon cinnamon - This adds a touch of warmth and spice that complements the banana and peanut butter perfectly.
  • Pinch of salt - A tiny pinch of salt balances the sweetness and brings out the nutty flavor of the peanut butter.

Method
 

  1. In a mason jar, bowl, or any airtight container, add the rolled oats, almond milk, mashed banana, and creamy peanut butter. Next, add the chia seeds, optional honey, vanilla extract, cinnamon, and a small pinch of salt.
  2. Stir all the ingredients together thoroughly until everything is well combined and the mixture is smooth. Make sure the peanut butter is fully incorporated. Cover the container tightly with a lid or plastic wrap to keep it fresh.
  3. Place the container in the refrigerator and let it sit overnight, or for a minimum of six hours. This chilling time is crucial, as it allows the oats and chia seeds to absorb the liquid and soften into a thick, creamy consistency.
  4. The next morning, take the jar out of the fridge and give the oats a good stir. The mixture will be thick and creamy. Top it with fresh banana slices and chopped peanuts for a satisfying crunch before serving it chilled.
