Lychee Ginger Mint Fizz Recipe

I recently made this Lychee Ginger Mint Fizz at home, and honestly, it instantly became one of my favorite refreshing drinks. The combination of sweet lychee, fresh mint, tangy lime, and fizzy ginger creates a beautifully balanced flavor.

Ingredients

  • 4 –5 lychee fruits canned or fresh
  • 2 oz lychee juice
  • Juice of ½–1 lime
  • A handful of fresh mint leaves
  • 1 oz ginger simple syrup
  • Ginger beer or soda water
  • Ice or crushed ice

Method

  1. Start by peeling a small piece of fresh ginger and slicing it slightly. Combine equal parts water and sugar in a saucepan and add the ginger. Bring the mixture to a gentle boil until the sugar dissolves and the liquid thickens slightly into a syrup. Allow it to cool before using.
  2. Place several fresh mint leaves and about 4–5 lychee fruits into a glass. Use a muddler or spoon to gently crush them together. This releases the aromatic oils from the mint and the sweet juices from the lychee.
  3. Fill the glass with crushed ice to keep the drink cold and refreshing. Pour in the lychee juice, the ginger simple syrup, and freshly squeezed lime juice. The combination creates a perfect balance of sweetness and citrus brightness.
  4. Top the drink with ginger beer or soda water to create the signature fizz. Stir gently to combine all the ingredients without losing the bubbles. This step brings the drink to life with refreshing carbonation.
  5. Take a quick taste before serving and adjust the flavors if needed. You can add more lime for acidity, extra syrup for sweetness, or more soda water to lighten the drink.

Notes

  • I always lightly slap the mint leaves before muddling them. This releases more aroma without making them bitter.
  • I prefer using crushed ice because it chills the drink faster and slightly dilutes the flavors in a pleasant way.
  • I sometimes grate a tiny bit of fresh ginger directly into the drink for a stronger ginger kick.
  • I like using chilled soda water or ginger beer so the drink stays fizzy longer.
  • I avoid over-muddling mint because it can turn slightly bitter if crushed too aggressively.
