Loaded Bacon Cheese Fries Recipe

I have to admit, I’ve never met a potato dish I didn’t love, and these loaded bacon cheese fries might just top my list. There’s something about golden, crispy fries smothered in velvety cheese sauce and topped with savory bacon that makes every bite irresistible. I made this recipe on a weekend game night, and it instantly became the star of the table.

Ingredients
  

  • 1 bag frozen French fries 32 oz – Choose crispy, oven-ready fries for the best texture.
  • Cheese sauce see recipe below – Freshly made sauce melts better and tastes richer.
  • ½ pound bacon cooked and crumbled – Thick-cut bacon gives a perfect balance of crispiness and flavor.
  • 4 green onions chopped – Adds freshness and a mild crunch.
  • ¼ cup sour cream – For a creamy tangy finish.
  • 2 tablespoons butter – Unsalted butter lets you control the seasoning.
  • 2 tablespoons all-purpose flour – Helps thicken the sauce perfectly
  • 1 cup milk – Whole milk makes the sauce creamier.
  • 1 ½ cups Cheddar cheese shredded (6 ounces) – Freshly shredded melts more smoothly than pre-shredded.
  • Salt and pepper to taste – Season gradually to avoid overpowering the cheese.

Method
 

  1. Start by baking your frozen fries according to the package directions. Crispy fries are key, so avoid overcrowding the baking sheet. This ensures each fry is golden and perfect for holding cheese sauce.
  2. Melt butter in a small saucepan and whisk in flour, cooking for about a minute. Gradually add milk and stir until the sauce thickens, roughly 5 minutes. Remove from heat, stir in shredded cheese until smooth, and season with salt and pepper.
  3. While the fries bake, cook the bacon until crispy and chop into small pieces. Thick-cut bacon works best for a meaty crunch that stands up to the cheese and fries.
  4. Once fries are out of the oven, immediately drizzle with warm cheese sauce. Sprinkle crumbled bacon over the top, add dollops of sour cream, and finish with chopped green onions for freshness.
  5. Serve the loaded bacon cheese fries immediately while hot and melty. They’re perfect as a side, appetizer, or even a main snack for game night or a cozy treat.
