Keto Crispy Reuben Roll-Ups Recipe

I recently made these Keto Crispy Reuben Roll-Ups, and honestly, they turned out even better than I expected. I love how they combine that classic deli-style flavor with a low-carb twist.

Ingredients
  

  • 8 slices Swiss cheese
  • 8 slices deli corned beef
  • ½ cup sauerkraut (drained
  • 2 tablespoons Thousand Island dressing
  • 1 teaspoon caraway seeds optional
  • Cooking spray or parchment paper

Method
 

  1. Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking. This step ensures the cheese crisps up nicely without burning or sticking.
  2. Place the Swiss cheese slices flat on the prepared baking sheet. Leave a little space between each slice so they don’t melt into each other. This forms the crispy outer layer of your roll-ups.
  3. Bake the cheese slices for about 5–6 minutes until they start to melt and bubble. You want them soft enough to roll but slightly crisp around the edges for texture.
  4. Remove the tray from the oven and quickly layer corned beef on each slice. Add a small amount of drained sauerkraut and drizzle a little dressing on top for that classic Reuben flavor.
  5. Carefully roll each cheese slice while it’s still warm and flexible. Work quickly so the cheese doesn’t harden before rolling. This step creates the signature roll-up shape.
  6. Place the rolled pieces back in the oven for another 5–6 minutes. This helps them firm up and become perfectly crispy on the outside while staying melty inside.

Notes

  • I always make sure to drain the sauerkraut really well—it makes a huge difference in crispiness.
  • I like to bake the cheese just enough so it’s flexible but not too crispy before rolling.
  • Using parchment paper saves me from a sticky mess and makes cleanup easy.
  • I sometimes add a little extra cheese inside for a more gooey center.
  • Letting them cool slightly before serving helps them hold their shape better.
