I made these Jalapeño Popper Bagels one lazy Sunday morning, and they instantly became a favorite in my house. They remind me of those spicy jalapeño poppers you'd find at parties—but with the bonus of being super satisfying and breakfast-ready! This mash-up is quick, delicious, and addictive. Whether you're craving comfort food or a new brunch idea, these cheesy, spicy bagels never disappoint.

Ingredients
  

  • 4 plain or everything bagels halved – Go with everything bagels if you want extra flavor and crunch.
  • 8 oz cream cheese softened – Let it sit at room temp for easy mixing. Full-fat works best for a rich texture.
  • 1 cup shredded cheddar cheese – Sharp cheddar gives that bold tangy bite.
  • ½ cup shredded mozzarella cheese – Melts beautifully and adds gooeyness.
  • 4 strips bacon cooked and crumbled – Adds a salty crunch; turkey bacon works too!
  • 2 –3 jalapeños sliced – Remove seeds for less heat or leave them for a spicy punch.
  • ¼ tsp garlic powder – Boosts the savory profile.
  • ¼ tsp onion powder – Adds subtle sweetness and depth.
  • ¼ tsp paprika – Smoked paprika adds a deeper flavor but regular works too.
  • ¼ tsp black pepper – Just enough kick to balance the flavors.
  • 2 tbsp green onions chopped – Optional, but adds freshness and a pop of color.

Method
 

  1. Start by heating your oven to 375°F (190°C). Line a baking tray with parchment paper for easy cleanup. This helps prevent sticking and browning the bottoms too fast.
  2. In a medium-sized bowl, combine the softened cream cheese, cheddar, mozzarella, garlic powder, onion powder, paprika, and black pepper. Stir it well so the mixture is evenly blended and creamy.
  3. Slice your bagels in half and lay them cut-side up. Use a spoon or spatula to spread a generous layer of the cream cheese mix on each half. Don’t be shy—the more, the better!
  4. Top each half with a few slices of jalapeño. If you’re worried about heat, make sure to remove the seeds. Then sprinkle crumbled bacon on top. Press lightly so it sticks to the cheese layer.
  5. Place your loaded bagels on the baking sheet and pop them in the oven. Bake for 12 to 15 minutes or until the cheese is bubbling and the edges look golden and crispy.
  6. Remove from the oven and sprinkle chopped green onions over the top if you like. Let them cool for a couple of minutes before digging in!
