Ingredients

  • For the Chicken
  • 2 chicken breasts cooked and diced
  • ¼ cup honey garlic sauce
  • ¼ cup buffalo wing sauce or plain hot sauce
  • For the Salad
  • 2 heads romaine lettuce chopped and washed
  • 3-6 tablespoons ranch dressing or dressing of choice
  • ½ red onion diced
  • 1 large red bell pepper diced
  • ½ cucumber diced
  • Shredded cheddar cheese optional

Method

  1. Start by cooking your chicken breasts. You can grill, bake, or pan-sear them, depending on your preference. Once cooked, dice the chicken into bite-sized pieces. While still warm, toss it in a bowl with honey garlic sauce and buffalo wing sauce. The spicy-sweet glaze will coat every piece of chicken beautifully, giving it a burst of flavor. If you want to dial up the heat, use a spicier sauce or more buffalo sauce.
  2. Next, wash and chop the romaine lettuce. Ensure it’s well-drained, as no one loves a soggy salad. Toss the lettuce in a large bowl with your favorite dressing. I usually go for ranch because it complements the heat and sweetness of the chicken perfectly, but Caesar or a creamy honey mustard work well too.
  3. Spread the dressed lettuce on a large serving plate or bowl. Now comes the fun part! Sprinkle the salad with diced red onions, crisp red bell peppers, and refreshing cucumbers. Add a handful of shredded cheddar cheese or skip it if you prefer a lighter option. Layer the spicy honey-glazed chicken right on top. It’s like the crown jewel of this salad, bringing all the flavors together.
  4. Serve immediately and watch it disappear in no time.
