High Protein Chicken Street Corn Salad Recipe

I recently made this high protein chicken street corn salad, and honestly, it turned out even better than I expected. The creamy texture combined with smoky corn and juicy chicken felt so satisfying yet light.

Ingredients
  

  • 2 cups cooked shredded chicken
  • cups corn kernels
  • 1 small red onion finely chopped
  • 1 red bell pepper diced
  • ¼ cup fresh cilantro chopped
  • ½ cup low-fat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ cup crumbled feta or cotija cheese
  • Salt and black pepper to taste

Method
 

  1. Start by cooking or shredding your chicken. I usually use grilled or leftover chicken because it adds a smoky flavor and saves time. Make sure it’s tender and cut into bite-sized pieces for easy mixing.
  2. Heat a skillet and roast the corn until slightly charred. This step adds that classic street corn flavor and makes a big difference in taste. Let it cool slightly before adding it to the salad.
  3. Dice the onion, bell pepper, and fresh herbs. Keep the pieces small so every bite has a balanced mix of textures. Fresh ingredients really bring brightness to this creamy salad.
  4. In a bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper. Stir until smooth and creamy. The dressing should taste tangy, slightly spicy, and rich.
  5. Add chicken, corn, vegetables, and cheese into a large bowl. Pour the dressing over and mix gently until everything is evenly coated. Make sure not to overmix to keep textures intact.
  6. Refrigerate the salad for at least 20–30 minutes before serving. This helps the flavors blend beautifully. Serve chilled for the best taste and refreshing experience.
