Grilled Asparagus Salad with Feta & Lemon Recipe

I recently made this Grilled Asparagus Salad with Feta & Lemon, and it instantly became one of my favorite springtime dishes. The bright flavors of lemon paired with salty feta make every bite refreshing and satisfying.

Ingredients
  

  • 1 lb fresh asparagus trimmed – Choose firm, bright green asparagus for the best flavor.
  • 2 tablespoons olive oil – Extra virgin olive oil works best for roasting and dressing.
  • 1/2 teaspoon salt – Enhances the natural flavors of the asparagus.
  • 1/4 teaspoon black pepper – Freshly ground gives the best kick.
  • 1/3 cup crumbled feta cheese – I always use fresh feta for creaminess and tang.
  • 2 tablespoons of fresh lemon juice – Brightens the salad and balances the feta’s saltiness.
  • 1 teaspoon lemon zest – Adds a subtle aromatic punch.
  • 1/4 cup toasted almonds – Optional but adds crunch and nutty flavor.
  • 1 teaspoon honey or maple syrup – Optional enhances the natural sweetness of asparagus.

Method
 

  1. Preheat your grill or grill pan over medium-high heat. Place the asparagus on the grill and cook for about 5–7 minutes, turning occasionally until tender and lightly charred. The grill marks make it look as appetizing as it tastes.
  2. In a small bowl, whisk together lemon juice, lemon zest, and honey. This simple dressing brightens the salad and complements the smoky asparagus beautifully. Adjust sweetness or acidity to taste.
  3. Arrange the grilled asparagus on a serving plate. Sprinkle crumbled feta and toasted almonds over the top. Drizzle with the lemon dressing and gently toss just before serving for even flavor distribution.

Notes

  • I like to grill the asparagus until it’s slightly crispy on the edges but still tender inside.
  • I always zest the lemon right before making the dressing to keep the flavor fresh.
  • Toasting the almonds brings out a deeper nutty flavor that elevates the salad.
  • I sometimes add a pinch of smoked paprika to the dressing for an extra layer of flavor.
