Garlic Butter Herb Steak Bites with Potatoes Recipe

I can’t get enough of this garlic butter herb steak bites with potatoes recipe! Every time I make it, my kitchen fills with the irresistible aroma of sizzling garlic and herbs. The steak turns perfectly golden and tender, while the potatoes are crispy on the outside and soft on the inside.

Ingredients
  

  • 1 tbsp olive oil – adds a nice base for cooking potatoes without overpowering the flavors.
  • 2 tbsp butter divided – gives the dish a rich, creamy finish; use unsalted for better control.
  • 1 pound Yukon Gold potatoes sliced ½-inch thick – these hold their shape and crisp nicely; avoid frozen for best texture.
  • 3 cloves garlic minced – fresh garlic adds a punch of flavor; skip pre-minced for a fresher taste.
  • 1 tsp thyme chopped – fresh thyme gives earthy undertones.
  • 1 tsp rosemary chopped – balances richness with a fragrant note.
  • 1 tsp oregano chopped – adds a subtle herbal layer.
  • 1 ¼ lbs beef sirloin steak cut into 1-inch cubes – sirloin sears beautifully; trim excess fat.
  • Salt to taste – enhances all flavors.
  • Black pepper to taste – freshly cracked is best.

Method
 

  1. Start by heating a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter to get the base sizzling. This ensures your potatoes cook evenly and pick up great flavor.
  2. Add sliced potatoes, garlic, thyme, rosemary, and oregano to the skillet. Cook for 3 minutes, stirring occasionally, then continue for another 3 minutes until lightly golden. The herbs infuse the potatoes with aromatic flavor.
  3. Once cooked, transfer the potatoes to a plate and keep warm. This prevents them from overcooking while you sear the steak.
  4. Turn the heat to high and add the remaining butter. Add steak cubes and sear for 1 minute, then stir until the steak is evenly browned. The high heat locks in juices and creates a delicious crust.
  5. Return the potatoes to the skillet and toss with the steak. Finish with a sprinkle of fresh herbs and a bit more butter if desired. Serve immediately for the best taste and texture.
