Farmhouse Beans and Sausage Recipe

I have to tell you, making this farmhouse beans and sausage recipe instantly brought back memories of my mom cooking on busy weeknights. It’s one of those meals that’s comforting, simple, and full of flavor. I love how it comes together quickly, especially when using an Instant Pot, and the aroma fills the kitchen in minutes.
Prep Time 5 minutes
Cook Time 15 minutes
Servings: 4

Ingredients

  • 2 cups gluten-free chicken broth – I like using low-sodium broth so I can control the saltiness.
  • 2 16- oz. packages frozen green beans – Frozen beans keep their texture better than fresh if you’re short on prep time.
  • 1 16- oz. package chicken sausage sliced – I use gluten-free chicken sausage, but any smoked sausage works. Slice it evenly for consistent cooking.
  • ½ onion diced – Fresh onions add sweetness; you can use frozen diced onions for convenience.
  • 2 teaspoons of Herbamare or your favorite seasoning salt – Adds a subtle herby depth to the dish.
  • Salt and pepper to taste – Adjust at the end to keep flavors balanced.

Method

  1. Start by slicing the sausage and dicing the onion. Frozen green beans can go straight from the bag into the pot, which saves time. I like to have all ingredients ready before turning on the Instant Pot.
  2. Add all ingredients into the Instant Pot, including chicken broth and seasonings. Seal the lid, set to manual for 6 minutes, and let the magic happen. Quick-release the steam once cooking is done to avoid overcooking.
  3. Remove the lid carefully, give everything a gentle stir, and the dish is ready. The beans are tender, the sausage is perfectly cooked, and the flavors have melded beautifully. I usually taste and adjust seasoning at this stage.

Notes

  • I like to slice the sausage into slightly thicker pieces; it keeps them juicy.
  • Adding a splash of chicken broth at the end keeps the beans saucy and flavorful.
  • I always let the dish sit for a few minutes after cooking to let the flavors settle.
  • Freshly ground black pepper right before serving elevates the taste.
