Easy Traditional Shortbread Recipe (Scottish Recipe)

I have always loved simple, buttery treats, and nothing beats the classic charm of Scottish shortbread. After making this recipe myself, I can honestly say it’s delightfully crumbly, rich, and perfect with a cup of tea. The best part? It only requires three basic ingredients! I love how easy it is to make and how everyone always asks for seconds.
Total Time 45 minutes

Ingredients

  • 1 cup 225g unsalted butter – use high-quality butter for the best flavor and texture
  • ½ cup 100g caster sugar – finer sugar dissolves better for a smooth shortbread
  • 2 cups 250g all-purpose flour – provides structure while keeping the crumb tender
  • ¼ teaspoon salt – enhances the buttery flavor

Method

  1. Start by measuring all your ingredients accurately. Make sure the butter is at room temperature so it mixes easily with the sugar and flour. This step ensures a smooth, even dough.
  2. Combine butter, caster sugar, flour, and salt in a bowl or food processor. Pulse until the mixture resembles coarse breadcrumbs. Press together with your fingers to check if it forms a soft dough.
  3. Press the dough into a greased baking pan using your fingers until it’s evenly spread. Use a fork to prick the top in rows, which helps it bake evenly and makes cutting easier.
  4. Preheat the oven to 350°F (175°C). Bake the shortbread for 30–35 minutes until it’s light golden and firm to the touch. Sprinkle lightly with caster sugar as it cools.
  5. Let the shortbread cool completely before cutting it into fingers, rounds, or triangles. Serve with tea, coffee, or simply enjoy as a buttery snack.

Notes

  • I always use high-quality butter—it really makes a difference in flavor
  • I lightly chill the dough before baking to prevent spreading
  • I prick the shortbread with a fork right before baking to get crisp, delicate edges
  • I sometimes add a hint of vanilla or citrus zest for extra aroma
  • I store leftover shortbread in an airtight container for optimal freshness
