Ingredients
  

  • 4 cod fillets 6 oz each: Use fresh cod for the best texture. Avoid frozen if possible, as it can release too much water.
  • 1/4 cup soy sauce or coconut aminos for Paleo: Adds a deep umami flavor and balances sweetness.
  • 2 tablespoons honey: Provides natural sweetness and helps the glaze caramelize.
  • 2 tablespoons rice vinegar: Adds tang and balances the honey's sweetness.
  • 1 tablespoon fresh ginger grated: Gives a punchy, warming flavor — always use fresh for best results.
  • 2 garlic cloves minced: Enhances the savory depth of the glaze.
  • 1 teaspoon sesame oil: Just a little goes a long way to add nutty richness.
  • 1 tablespoon olive oil: For searing the cod with a light and healthy fat.
  • 1 teaspoon cornstarch optional: Helps thicken the glaze if desired. Mix with a splash of water before adding.
  • Sesame seeds & green onions: For garnish and a fresh nutty finish.

Method
 

  1. Start by combining the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil in a small bowl. Whisk it well until the honey dissolves completely. This mixture will be your flavorful glaze that brings everything together. You can also use coconut aminos if you're following a Paleo diet for a milder, slightly sweeter version.
  2. Heat olive oil in a large skillet over medium heat. While the oil is heating, season the cod fillets lightly with salt and pepper. Carefully place the fillets in the skillet. Let them sear for 3–4 minutes on each side until they turn golden brown and are cooked through. Remove the cod gently and set it aside on a plate.
  3. In the same skillet, pour in your prepared glaze. Let it simmer for a few minutes until it starts to reduce slightly. If you prefer a thicker glaze, mix the cornstarch with a splash of water and stir it into the sauce. Once the glaze starts to thicken, return the cod fillets to the pan and spoon the glaze over the top until they’re nicely coated.
  4. Transfer the glazed cod to a serving plate. Drizzle extra glaze over the top for more flavor. Garnish with sesame seeds and chopped green onions for freshness and crunch. This dish pairs beautifully with a bowl of steamed rice and some roasted or sautéed vegetables for a complete and balanced meal.
