Easy Boiled Potatoes Recipe

I recently made these boiled potatoes, and honestly, they were a game changer for family dinners. They’re incredibly simple to make but taste like you’ve put in way more effort. The buttery center and a hint of olive oil make them so comforting and flavorful.

Ingredients
  

  • 1 ½ to 2 lbs of small potatoes yellow or red: These types hold their shape and have a creamy interior. Ensure they’re clean and roughly the same size for even cooking.
  • 1 tablespoon salt for boiling water: Adds flavor to the potatoes as they cook.
  • 2 tablespoons unsalted butter melted: Drizzle once cooked to enhance the creamy texture.
  • 2 tablespoons extra virgin olive oil: Adds depth and a rich fruity note to complement the butter.
  • 1 teaspoon kosher salt or to taste: For seasoning afterward.
  • ½ teaspoon freshly ground black pepper or to taste.
  • 2 tablespoons finely chopped parsley optional: Complements the potatoes and makes them look vibrant.

Method
 

  1. Start by washing and scrubbing your potatoes. If any potatoes are larger, cut them in half so they cook evenly. Smaller ones can stay as they are.
  2. Place your potatoes in a pot and cover them with water. Add 1 tablespoon of salt to the water to flavor the potatoes from within. Bring the water to a boil over medium-high heat. Once it’s bubbling, reduce the heat and simmer gently for 10-18 minutes. Keep an eye on them; you’ll know they’re ready when you can poke them with a fork easily.
  3. Drain the water completely using a colander. You can leave the potatoes in the pot for an extra minute or two to steam off any excess moisture. This step will help them absorb the flavor better when seasoned.
  4. Drizzle the drained potatoes with your melted butter and olive oil. Gently toss the potatoes to coat them evenly. If some of the potatoes break apart, that’s okay. It makes them even creamier!

Notes

  • Cut potatoes to equal sizes so they cook evenly and consistently.
  • For extra flavor, add a couple of garlic cloves or a sprig of rosemary to the boiling water.
  • Don’t skip salting the water! It makes a huge difference.
  • If you’re in the mood for crispy potatoes, sauté them briefly in a skillet after boiling.
  • Use small baby potatoes for the best results – they are creamier than larger ones!
