I have to admit, the first time I made these soy-marinated eggs, I was hooked instantly. There’s something magical about the glossy, flavor-packed exterior hiding a soft, jammy yolk inside. I couldn’t stop thinking about how addictive they were as soon as they hit the fridge. Making them at home is surprisingly simple, and I love having a batch ready to add to rice bowls, ramen, or even just as a quick snack.

Ingredients
  

  • Large eggs – 6 to 8. Soft-boiled to perfection they’re the centerpiece of this recipe. Pro tip: Use room temperature eggs to prevent cracking.
  • Soy sauce – ½ cup. Creates a deep savory umami base. A high-quality soy sauce gives a richer flavor.
  • Water – ½ cup. Balances the saltiness of the soy sauce for a smoother taste.
  • Sesame oil – 1 tablespoon. Adds a nutty aroma that transforms the marinade. A little goes a long way.
  • Brown sugar – 1 tablespoon. Brings subtle sweetness to balance the salty marinade.
  • Garlic – 4 cloves minced. Infuses a fragrant kick that elevates the eggs.
  • Green onions – 2 stalks finely chopped. Adds freshness and color.
  • Chili peppers – 1 to 2 thinly sliced. Adds gentle heat. Adjust according to your spice preference.
  • Toasted sesame seeds – 1 tablespoon. Provides crunch and an extra layer of nutty flavor.

Method
 

  1. Start by preparing an ice bath to stop the eggs from overcooking. Bring a pot of water to a gentle boil. This ensures your eggs cook evenly and peel easily later.
  2. In a mixing bowl, stir together soy sauce, water, sesame oil, brown sugar, garlic, green onions, chili peppers, and toasted sesame seeds. This combination forms a rich, balanced marinade.
  3. Gently lower the room-temperature eggs into the boiling water. Boil for exactly 6 to 6.5 minutes to achieve a jammy yolk. Immediately transfer them to the ice bath to halt cooking.
  4. Once the eggs are cooled, carefully peel them to maintain the smooth surface. Place them in your airtight container or bowl, ready for soaking in the marinade.
  5. Pour the prepared marinade over the peeled eggs, ensuring full coverage. Place a small plate on top if needed to keep eggs submerged. Cover and refrigerate for at least 6 hours, flipping halfway through to marinate evenly.
