Cucumber and Herb Tea Sandwiches Recipe

I recently made these cucumber and herb tea sandwiches, and honestly, they turned out so fresh and elegant that I couldn’t stop eating them. The crisp cucumber paired with creamy herbed spread felt light yet satisfying.

Ingredients
  

  • 1 large English cucumber thinly sliced
  • 8 slices soft white bread
  • ½ cup cream cheese softened
  • 2 tablespoons unsalted butter softened
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Start by washing the cucumber thoroughly and slicing it into very thin rounds. Lightly sprinkle salt over the slices and let them sit for a few minutes to draw out excess moisture. Pat them dry with paper towels to avoid soggy sandwiches.
  2. In a bowl, combine softened cream cheese, butter, dill, chives, lemon juice, salt, and pepper. Mix until smooth and creamy. The herbs should be evenly distributed, creating a flavorful and aromatic spread.
  3. Take fresh bread slices and trim off the crusts for a classic tea sandwich look. Spread a thin, even layer of the herb mixture on each slice. Make sure to cover the entire surface to create a moisture barrier.
  4. Layer the cucumber slices evenly over one slice of bread. Place another slice on top, spread side down, to form a sandwich. Press gently so everything holds together without squeezing out the filling.
  5. Use a sharp knife to cut the sandwiches into triangles or small rectangles. Serve immediately for the best texture and freshness. These sandwiches are best enjoyed right after assembling.

Notes

  • I always use English cucumbers because they’re less watery and taste better
  • I make sure to dry the cucumber slices well to avoid soggy bread
  • I prefer fresh herbs instead of dried ones for a brighter flavor
  • I spread butter along with cream cheese to keep the bread soft longer
  • I chill the sandwiches for 10 minutes before serving for extra freshness.
