Creamy Honey Mustard Chicken Salad

I recently made this creamy honey mustard chicken salad when I wanted something quick but still satisfying. The first bite instantly surprised me with its perfect balance of sweet, tangy, and creamy flavors.

Ingredients
  

  • 3 cups cooked chicken breast diced
  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 celery stalks finely diced
  • ¼ cup finely diced red onion
  • 1 –2 tablespoons fresh herbs dill or green onions
  • ¼ teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Start by adding Greek yogurt, mayonnaise, Dijon mustard, honey, salt, and black pepper to a mixing bowl. Whisk everything together until the mixture becomes smooth and creamy. The dressing should taste slightly sweet with a gentle tang.
  2. Dice the cooked chicken into small bite-size pieces so it mixes evenly with the dressing. Finely chop celery and red onion to add texture and freshness. Preparing the ingredients this way ensures every bite has balanced flavor.
  3. Add the diced chicken, celery, onion, and herbs into the bowl with the dressing. Gently fold everything together until the chicken is fully coated. Be careful not to overmix so the chicken keeps its texture.
  4. Taste the salad and adjust seasoning if needed. You can add a little extra mustard for tang, honey for sweetness, or a squeeze of lemon juice to brighten the flavor. This step helps balance the overall taste.
  5. Place the salad in the refrigerator for about 20–30 minutes before serving. Chilling allows the flavors to blend together and makes the salad taste even better.

Notes

  • I prefer using rotisserie chicken because it adds more flavor and saves cooking time.
  • I like to chill the salad for at least 30 minutes before serving because the dressing absorbs better into the chicken.
  • I sometimes add chopped apples or grapes when I want a sweet contrast in the salad.
