Creamy French Chicken Casserole à la Normande Recipe

I recently made this Creamy French Style Chicken Casserole à la Normande, and I honestly can’t stop thinking about it. The rich, creamy sauce paired with tender chicken and subtle sweetness from apples creates such a comforting dish.

Ingredients
  

  • 6 chicken thighs bone-in, skin-on
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 2 apples sliced
  • 200 g mushrooms sliced
  • 150 ml dry cider
  • 150 ml chicken stock
  • 200 ml heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 tablespoon butter

Method
 

  1. Start by seasoning the chicken thighs with salt and pepper. Heat olive oil in a pan and sear the chicken until golden brown on both sides. This step locks in flavor and creates a beautiful color. Remove the chicken and set it aside.
  2. In the same pan, add chopped onions and cook until soft and translucent. Stir in garlic and cook briefly until fragrant. This creates the flavorful base of the casserole.
  3. Add sliced apples and mushrooms to the pan and cook until slightly softened. The apples release a subtle sweetness while mushrooms bring depth. Stir everything together for even cooking.
  4. Pour in the cider and let it simmer to reduce slightly. Add chicken stock, Dijon mustard, and thyme, then stir well. This forms a rich, aromatic sauce with balanced flavors.
  5. Return the chicken to the pan and spoon sauce over it. Add cream and butter, then transfer everything to an oven-safe dish if needed. Bake until the chicken is fully cooked and tender.
  6. Once cooked, let the casserole rest for a few minutes. The sauce will thicken slightly as it cools. Serve warm with your favorite sides for a comforting meal.

Notes

  • I always use bone-in chicken because it adds much more flavor to the sauce
  • Don’t skip searing the chicken—it creates a deeper, richer taste
  • I prefer slightly tart apples to balance the creamy sauce
  • Let the casserole rest before serving; it helps the sauce thicken beautifully
  • Taste and adjust seasoning at the end for the best flavor balance.
