Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs) – tender and juicy when slow-cooked
  • 8 oz fresh baby bella mushrooms sliced – earthy and hearty texture
  • 4 cloves fresh garlic minced – brings bold flavor and aroma
  • 1 cup low-sodium chicken broth – helps keep the base light while enhancing flavor
  • 1 cup heavy cream – gives the sauce that rich creamy finish
  • 2 tbsp liquid aminos or Marsala wine substitute – adds a deep savory note
  • 1 tsp dried Italian herbs basil and oregano – for a warm, herby flavor
  • Salt and pepper to taste – basic seasoning but essential
  • 2 tbsp olive oil – helps caramelize the mushrooms

Method

  1. Start by seasoning the chicken breasts with a good pinch of salt and pepper. This step ensures that flavor reaches every bite.
  2. Heat olive oil in a skillet over medium heat. Toss in the sliced mushrooms and sauté them until they turn golden brown and start releasing their juices. This step enhances their earthy flavor.
  3. In a mixing bowl, whisk together chicken broth, heavy cream, liquid aminos (or Marsala wine if you prefer), garlic, and dried herbs. Make sure it’s well blended to create a smooth sauce.
  4. Place the seasoned chicken in your slow cooker. Add the sautéed mushrooms on top. Then, pour the creamy sauce over everything so the chicken is completely covered.
  5. Cover the crock pot and cook on LOW for 6–8 hours or HIGH for 3–4 hours. The chicken will turn incredibly tender and soak up all the creamy goodness.
  6. Once done, use a fork to shred or slice the chicken. Serve it over your favorite base—rice, mashed potatoes, or pasta—and don’t forget to drizzle that delicious sauce over the top.
