Chocolate Covered Strawberries Wedding Recipe

I just finished making a batch of these chocolate covered strawberries, and my kitchen smells heavenly! They are surprisingly simple to create, yet look so elegant and professional. They’re the perfect sweet treat for a special occasion.

Ingredients
  

  • 1 pound fresh strawberries: Choose large ripe, and firm strawberries with lush green stems. The stems make for a beautiful presentation and a convenient handle for dipping.
  • 10 ounces semisweet chocolate: Use high-quality chocolate either in chip or bar form (chopped). Good chocolate melts smoother and tastes richer.
  • 3 ounces white chocolate optional: This is for creating a beautiful drizzle effect. It adds a lovely contrast in both color and flavor.
  • Toppings of your choice: Think sprinkles chopped nuts, toasted coconut, or edible glitter to match your wedding theme.

Method
 

  1. The most critical step for success is ensuring your strawberries are completely dry. Start by washing them in a cold water bath with a tablespoon of vinegar to clean them well. After soaking for about 10-20 minutes, rinse them and gently pat each one dry with a paper towel. Let them air dry on a clean dish towel until no moisture remains.
  2. While the strawberries are drying, it's time to melt your chocolate. You can use a microwave by heating the chocolate in a microwave-safe bowl in 30-second intervals at half power, stirring between each one. Alternatively, use a double boiler (or a heatproof bowl set over a saucepan of simmering water) to melt the chocolate gently, stirring until it's completely smooth.
  3. Set up your dipping station. Line a baking sheet with parchment or wax paper. Holding a strawberry by its stem, dip it into the melted chocolate, swirling it to coat it evenly. Lift the strawberry and allow any excess chocolate to drip back into the bowl before placing it on the prepared baking sheet.
  4. If you're adding toppings like sprinkles or nuts, do so immediately after dipping while the chocolate is still wet. For a white chocolate drizzle, wait until the dark chocolate has started to set. Melt the white chocolate, and then use a fork or a small piping bag to create elegant lines over the strawberries. Let them set at room temperature for about 30 minutes or in the refrigerator for 15 minutes.
