Chickpea, Spinach & Herb Stew Recipe

I still remember the first time I made this chickpea, spinach and herb stew—it filled my kitchen with the most comforting aroma. Ingredients
  

  • 2 cups cooked chickpeas or 1 can, drained and rinsed – Use freshly cooked for better texture and flavor.
  • 2 tablespoons olive oil – Adds richness and helps sauté aromatics evenly.
  • 1 medium onion finely chopped – Builds the base flavor of the stew.
  • 3 cloves garlic minced – Fresh garlic enhances depth; avoid pre-minced for best taste.
  • 1 teaspoon ground cumin – Adds warmth and earthiness.
  • 1 teaspoon paprika – Brings a mild smoky flavor.
  • 4 cups fresh spinach – Fresh works best for texture; avoid frozen if possible.
  • 1 cup vegetable broth – Helps create a light yet flavorful base.
  • 1/2 cup fresh herbs parsley, cilantro, or dill, chopped – Adds brightness and freshness.
  • 1 tablespoon lemon juice – Enhances flavor and balances richness.
  • Salt and black pepper to taste – Adjust according to preference.

Method
 

  1. Start by chopping the onion, garlic, and fresh herbs. Rinse the chickpeas thoroughly if using canned ones. Having everything ready makes the cooking process smooth and quick.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, then stir in the garlic and spices. This step builds a rich flavor base.
  3. Mix in the chickpeas and pour in the vegetable broth. Let everything simmer gently so the flavors combine beautifully. Stir occasionally to prevent sticking.
  4. Add fresh spinach and let it wilt into the stew. Stir in chopped herbs for freshness and aroma. The greens will cook down quickly.
  5. Squeeze in lemon juice and season with salt and pepper. Taste and adjust flavors if needed. Serve warm for the best experience.

Notes

  • I always sauté the spices with onions to release deeper flavor.
  • I prefer fresh herbs over dried—they make a noticeable difference.
  • Adding a drizzle of olive oil at the end enhances richness.
  • I sometimes mash a few chickpeas to thicken the stew naturally.
