Caramelized Onion Tadka Dal Recipe 

I recently made this caramelized onion tadka dal, and honestly, it completely changed how I look at simple lentils. The deep, sweet flavor from slowly browned onions added so much richness that every bite felt special.

Ingredients
  

  • 1 cup yellow lentils toor dal or masoor dal
  • 3 cups water
  • 2 medium onions thinly sliced
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 3 –4 garlic cloves finely chopped
  • 1- inch ginger grated
  • 2 green chilies slit
  • 2 tomatoes finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1/2 teaspoon garam masala
  • Fresh coriander leaves chopped
  • 1 teaspoon lemon juice

Method
 

  1. Start by rinsing the lentils thoroughly to remove excess starch and impurities. Add them to a pot or pressure cooker with water, turmeric, and a pinch of salt. Cook until they are soft and slightly mushy, then lightly mash them for a creamy texture.
  2. Heat oil or ghee in a pan and add sliced onions. Cook them slowly on medium-low heat, stirring occasionally, until they turn deep golden brown. This step takes time, but it’s essential for developing that rich, sweet flavor.
  3. Once the onions are caramelized, add cumin seeds, garlic, ginger, and green chilies. Sauté until fragrant, then add chopped tomatoes and cook until they soften and release oil. Stir in the powdered spices and cook briefly to enhance their aroma.
  4. Pour the cooked lentils into the pan with the onion mixture. Stir well to combine and let it simmer for a few minutes so the flavors blend together. Adjust salt and consistency by adding water if needed.
  5. Sprinkle garam masala and add lemon juice for brightness. Garnish with fresh coriander leaves before serving. Let the dal rest for a few minutes so the flavors settle beautifully.

Notes

  • I always cook onions slowly; rushing them prevents proper caramelization
  • I prefer using ghee because it adds a rich, authentic taste
  • I mash the dal slightly to get that perfect creamy consistency
  • I add lemon juice at the end—it really lifts the flavor
  • I sometimes add a pinch of sugar to balance acidity if tomatoes are too tangy.
