Blueberry Custard Crumble Buns Recipe

I have to admit, these blueberry custard crumble buns completely won me over the first time I baked them. I wasn’t expecting them to turn out this soft, creamy, and bakery-perfect at home.

Ingredients
  

  • ¾ cup whole milk (war
  • 1 tsp active dry yeast
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 ¼ cups all-purpose flour
  • 1 tsp salt
  • 3 tbsp unsalted butter
  • 8 oz cream cheese
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 8 oz cream cheese
  • 2 tbsp heavy cream

  • 3 tbsp melted butter
  • ½ cup flour
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • Powdered sugar for dusting

Method
 

  1. Start by warming the milk until it’s slightly warm, not hot. Add yeast and let it sit until it becomes foamy. This step ensures your dough rises properly.
  2. This is the foundation of soft buns, so don’t rush it.
  3. Add sugar and egg to the yeast mixture and mix well. Gradually add flour and salt, then knead until a soft dough forms.
  4. The dough should feel slightly sticky but smooth.
  5. Incorporate butter slowly while kneading the dough. Continue kneading until the dough becomes elastic and soft.
  6. This step gives the buns their rich texture.
  7. Place the dough in a greased bowl and cover it. Let it rise in a warm place until it doubles in size.
  8. This usually takes about 1–2 hours.
  9. Divide the dough into equal portions and shape into balls. Flatten each one slightly and place them on a baking tray.
  10. Leave space between each bun for expansion.
  11. Mix cream cheese, vanilla, cream, and powdered sugar until smooth. Transfer the mixture into a piping bag.
  12. Make sure there are no lumps in the filling.
  13. Brush buns with egg wash and create a small indent in the center. Pipe the custard into each bun carefully.
  14. This step gives them that bakery-style look.
  15. Spoon a little jam over the custard and top with fresh blueberries.
  16. This creates a juicy, fruity layer inside.
  17. Mix butter, flour, brown sugar, and cinnamon until crumbly. Sprinkle generously over the buns. The crumble adds texture and sweetness.
  18. Bake in a preheated oven at 375°F (190°C) for about 20–25 minutes. They should turn golden and slightly crisp on top.
  19. Let the buns cool slightly before dusting with powdered sugar. This helps the custard set properly. Now they’re ready to enjoy themselves!

Notes

  • I always use warm (not hot) milk to activate yeast perfectly
  • I prefer room temperature cream cheese for a smooth filling
  • I let the buns rest after baking so the custard sets nicely
  • I sometimes add extra blueberries for a more fruity flavor
  • I make the dough ahead and let it rise overnight for better taste.
