Ingredients

  • 2 tablespoons unsalted butter – Adds richness and helps sauté the onions and chicken.
  • ½ sweet onion thinly sliced – Provides a mild sweetness that balances the spiciness of the buffalo sauce.
  • 1 lb boneless chicken thighs thinly sliced – Chicken thighs are ideal for this recipe as they stay moist and tender when cooked.
  • Salt and black pepper – Season to taste for added flavor.
  • ½ cup buffalo sauce – The star ingredient that gives the sandwich its signature spicy kick.
  • 4 slices provolone cheese – Melts well to form a gooey creamy layer on the sandwich.
  • 2 hoagie rolls – Choose soft slightly chewy rolls to hold the filling without falling apart.
  • Blue cheese dressing – A tangy creamy dressing to complement the spicy buffalo sauce.

Equipment

  • Skillet For cooking the onions and chicken.
  • Aluminum foil To wrap the sandwiches and help melt the cheese.
  • Baking sheet For placing the wrapped hoagie rolls in the oven

Method

  1. Preheat the oven to 350°F. In a large skillet, melt 2 tablespoons of unsalted butter over medium-high heat. Add the thinly sliced sweet onion to the skillet and cook for 4-5 minutes until the onions start to soften and brown. This adds a deep flavor to the sandwich that pairs beautifully with the chicken and buffalo sauce.
  2. Once the onions are golden, add the thinly sliced boneless chicken thighs to the skillet. Season the chicken with salt and black pepper to taste. Cook for about 4-5 minutes, stirring occasionally, until the chicken is fully cooked through. The chicken should be tender and juicy, providing the perfect texture for the sandwich.
  3. Pour in ½ cup of buffalo sauce into the skillet with the chicken and onions. Toss everything together until the chicken is evenly coated in the buffalo sauce. The sauce gives the chicken its signature spicy kick and complements the sweetness of the onions. Let this mixture simmer for another 1-2 minutes to ensure everything is well-mixed and heated through.
  4. Now, take the hoagie rolls and lay 2 slices of provolone cheese on each. Divide the buffalo chicken mixture evenly and place it onto the rolls, making sure each hoagie gets a generous portion of chicken and sauce.
  5. Wrap each hoagie roll tightly in aluminum foil to help melt the cheese and soften the bread. Place the wrapped sandwiches in the preheated oven and bake for 5 minutes. This step ensures that the cheese becomes melty and gooey, adding richness to every bite.
  6. Remove the sandwiches from the oven and unwrap them from the foil. Drizzle with blue cheese dressing for a tangy, creamy contrast to the spiciness of the buffalo sauce. Serve immediately and enjoy your homemade buffalo chicken cheesesteak!
