I’ll admit, I was a little hesitant to try making barbacoa chicken at home. But wow, what a game-changer! Packed with smoky chipotle flavors and tender meat that just falls apart, this recipe delivered on every level.

Ingredients
  

  • 2 pounds boneless skinless chicken thighs (or breasts)
  • 2 chipotle peppers in adobo sauce minced
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 4 garlic cloves minced
  • 1 onion quartered
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1/3 cup chicken broth
  • Salt and pepper to taste

Method
 

  1. Start by seasoning your chicken with salt and pepper. Place the pieces in the slow cooker along with the onion, garlic cloves, and a bay leaf. This simple base ensures the chicken absorbs amazing flavor as it cooks.
  2. Grab a mixing bowl and stir together the chipotle peppers, tomato paste, apple cider vinegar, cumin, oregano, and chicken broth. Pour this flavorful mixture over the chicken in the slow cooker, ensuring everything is evenly coated.
  3. Set the slow cooker on low and allow it to cook for about 4 hours. Keep an eye on the time – overcooking chicken can make it dry. Once the meat is done, remove the bay leaf and onions.
  4. Using two forks, shred the chicken directly in the pot. Toss the shredded meat back into the sauce for another 10-15 minutes to soak up all that bold flavor.
  5. Your barbacoa chicken is now ready to serve! Use it as a topping for tacos, bowls, or salads. Each bite bursts with smoky, savory goodness.
