When I first tried making a barbacoa bowl at home, I couldn’t believe how easy and delicious it was. It felt like reinventing takeout but with fresh, wholesome ingredients and way more flavor! The zesty rice, juicy beef, and colorful toppings turned a simple dish into a vibrant feast.

Ingredients
  

  • 1 cup cilantro lime rice
  • 1 cup barbacoa beef shredded
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn fresh, frozen, or grilled
  • 1 Roma tomato diced
  • 1/4 cup avocado sliced
  • 1/4 cup tortilla strips optional
  • 1 tablespoon fresh salsa
  • 1 tablespoon chopped cilantro
  • 1 lime wedge for garnish
  • Optional toppings: sour cream shredded cheese, or diced onions

Method
 

  1. Start by reheating your cooked cilantro lime rice and barbacoa beef. You can do this in the microwave or on the stovetop until they’re thoroughly warmed. A heated base ensures every bite feels cozy and satisfying.
  2. Choose your bowl and begin by spooning in the cilantro lime rice as the bottom layer. Pile on the shredded barbacoa beef over the rice, creating a hearty and flavorful core. Add a scoop of black beans and corn on top, balancing protein with sweetness.
  3. Next, scatter diced tomatoes and sliced avocado on the bowl for that fresh, creamy element. Finish with a dollop of salsa, crunchy tortilla strips, and chopped cilantro. Garnish with a lime wedge for a zesty finish. For an extra indulgence, drizzle with sour cream or toss on some shredded cheese.
