Ingredients
  

  • 4 ripe but firm pears halved and cored (ripe pears soften well in baking, but keep them firm to hold their shape)
  • 1/2 cup crumbled feta cheese freshly crumbled gives the best texture and tang
  • 1/4 cup dried cranberries chopped (choose unsweetened for a more natural tart flavor)
  • 2 tablespoons honey raw honey enhances flavor and gives a glossy finish
  • 1 tablespoon olive oil helps pears caramelize while baking
  • 1 teaspoon fresh thyme leaves adds earthy, aromatic balance
  • Salt and pepper to taste (a small pinch brings out the sweetness of the pears)
  • Optional: Chopped walnuts for garnish for crunch and extra richness

Method
 

  1. Preheat your oven to 375°F (190°C). Slice the pears in half and carefully scoop out the core with a spoon or melon baller. Remove a little extra flesh from the center to create a small well. This makes enough room to hold the cheese and cranberries without spilling.
  2. Place the pear halves cut-side up in a baking dish. Drizzle them lightly with olive oil to help them roast evenly. Fill each pear center with crumbled feta and chopped cranberries, pressing the mixture gently into the hollow. This combination gives both creaminess and tart bursts in every bite.
  3. Slide the dish into the oven and bake for 15–20 minutes. Keep an eye on the pears while baking. They should soften but still hold their shape. The feta will turn slightly golden, blending beautifully with the pears’ juices. Avoid overbaking, or the pears may become mushy.
  4. Once baked, remove the dish from the oven and drizzle the warm pears generously with honey. Sprinkle fresh thyme leaves over them for a fragrant touch. Add a light pinch of salt and black pepper to balance the sweetness. For crunch, top with chopped walnuts if you like.
  5. These baked pears are best enjoyed warm, straight from the oven. They also taste delicious at room temperature if you want to prepare them ahead of time. Serve as a light appetizer, a side with roasted meats, or even a cozy dessert with a drizzle of balsamic glaze.
