Ingredients

  • 1 ripe avocado: This is the key to a creamy rich texture. Make sure your avocado is ripe (it should yield to gentle pressure) for the best flavor and consistency.
  • 1 cup fresh spinach: Fresh spinach blends seamlessly and adds a powerful dose of vitamins without altering the taste. Avoid frozen spinach as it can make the smoothie watery.
  • 1 cup pineapple chunks: Use fresh or frozen pineapple for natural sweetness and a tropical tang. Frozen chunks will result in a thicker frostier smoothie.
  • 1 cup almond milk: Unsweetened almond milk provides a great liquid base. You can also use coconut milk oat milk, or regular dairy milk depending on your preference.
  • 1 tablespoon honey or maple syrup: This is optional for a touch of extra sweetness. You can adjust the amount based on how sweet your pineapple is.
  • Ice cubes: A small handful will make your smoothie refreshingly chilled especially if you are using fresh fruit.

Method

  1. First, get all your ingredients ready for the blender. Cut the ripe avocado in half, carefully remove the pit, and scoop the creamy flesh directly into the blender jar. Rinse your fresh spinach leaves thoroughly under cool water and add them in with the avocado.
  2. Next, add your pineapple chunks to the blender. Pour in the almond milk, making sure it covers the solid ingredients. Starting with less milk and adding more if needed is a good way to control the final thickness of your smoothie.
  3. If you'd like a sweeter smoothie, now is the time to drizzle in the honey or maple syrup. Add a handful of ice cubes to give the drink a chilled, refreshing quality. Secure the lid tightly on your blender to prevent any messes.
  4. Begin blending on a low speed, then gradually increase to high. Let it blend for about 1-2 minutes, or until the mixture is completely smooth and has a consistent, creamy texture. You shouldn't see any lingering chunks of fruit or spinach.
  5. Pour your freshly blended smoothie into glasses. It's best served immediately to enjoy its optimal flavor and creamy texture. Give it a quick taste and adjust sweetness or thickness if needed by adding more sweetener or a splash of milk and blending again.
