Rinse the cooked lasagna noodles in cold water and trim the curly edges. This helps the frittas seal properly and prevents them from unraveling during cooking.
In a medium bowl, whisk together ricotta, eggs, Asiago, mozzarella, Romano, Parmesan, Italian seasoning, salt, and pepper. Make sure it’s smooth and well combined for even flavor.
Lay noodles flat, spread cheese mixture evenly, and roll into 2–3 inch lengths. Place rolls in a parchment-lined container and freeze for 1 hour. This helps them hold their shape during frying.
Whisk the eggs in a shallow dish. In another dish, mix bread crumbs with Parmesan. Dip each frozen noodle roll first into the egg, then coat with the bread crumb mixture, shaking off excess.
Spray air fryer basket lightly with non-stick spray, arrange frittas in a single layer, and air fry at 400°F for 8 minutes. Flip, spray again, and cook for 6–8 more minutes until golden brown.
Remove frittas and keep warm in the oven while cooking remaining batches. Serve with marinara, Alfredo, or your favorite Italian sauce.
