Air Fryer Lasagna Fritta Recipe

I recently tried making Lasagna Fritta at home, and I have to say, it was a game-changer! I’ve always loved the crispy, cheesy Olive Garden appetizer, but frying it at home always felt messy. When I discovered I could make it in my air fryer, I was thrilled.

Ingredients
  

  • 2 Whole Large Eggs – acts as a binder for the cheese mixture.
  • 12 oz. Whole Wheat Lasagna Noodles cooked – whole wheat adds fiber and texture; cook until al dente.
  • 15 oz. Low-Fat Ricotta – creamy base avoid pre-flavored types for best taste.
  • 1/2 cup Shredded Asiago – adds a nutty tangy flavor.
  • 1/2 cup Shredded Mozzarella – melts beautifully for that gooey stretch.
  • 1/2 cup Grated Romano – sharp salty punch that complements ricotta.
  • 1/2 cup Grated Parmesan – enhances the overall cheesy depth.
  • 2 tbsp. Italian Seasoning – classic herb mix that elevates flavor.
  • Salt & Pepper to taste – always adjust to your liking.
  • 3/4 cup Whole Wheat Bread Crumbs – gives a crunchy exterior; panko works too.
  • 1/4 cup Grated Parmesan – mixed with crumbs for extra crispiness.
  • 2 Whole Large Eggs – helps the breading stick perfectly.

Method
 

  1. Rinse the cooked lasagna noodles in cold water and trim the curly edges. This helps the frittas seal properly and prevents them from unraveling during cooking.
  2. In a medium bowl, whisk together ricotta, eggs, Asiago, mozzarella, Romano, Parmesan, Italian seasoning, salt, and pepper. Make sure it’s smooth and well combined for even flavor.
  3. Lay noodles flat, spread cheese mixture evenly, and roll into 2–3 inch lengths. Place rolls in a parchment-lined container and freeze for 1 hour. This helps them hold their shape during frying.
  4. Whisk the eggs in a shallow dish. In another dish, mix bread crumbs with Parmesan. Dip each frozen noodle roll first into the egg, then coat with the bread crumb mixture, shaking off excess.
  5. Spray air fryer basket lightly with non-stick spray, arrange frittas in a single layer, and air fry at 400°F for 8 minutes. Flip, spray again, and cook for 6–8 more minutes until golden brown.
  6. Remove frittas and keep warm in the oven while cooking remaining batches. Serve with marinara, Alfredo, or your favorite Italian sauce.

Notes

  • I like to freeze the rolled noodles before breading; it keeps them from falling apart.
  • Spraying lightly with cooking spray makes them extra crispy without adding oil.
  • Using freshly grated cheese gives a richer, more authentic flavor.
  • I’ve found whole wheat noodles give better texture than regular pasta.
  • Don’t overcrowd the air fryer basket; it ensures even cooking.
