First, I defrost my cod if frozen, ideally overnight in the fridge. Then I pat it dry with paper towels so the spice rub sticks perfectly.
In a small bowl, I combine olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. I rub this mixture over the cod fillets evenly.
I preheat the air fryer to 400°F (200°C) and cook the cod for 8–10 minutes. The fish should flake easily with a fork when done.
Once cooked, I drizzle fresh lime juice and zest over the cod. It really brightens the flavor and makes it zesty and fresh.
I plate the cod with tortillas, shredded cabbage, and favorite taco toppings. It’s ready to enjoy immediately!
