Ingredients
  

  • 1.5 lbs flank steak or skirt steak
  • ¼ cup vegetable oil
  • Zest of one lime
  • Juice of one lime
  • 5 garlic cloves smashed
  • ½ yellow onion quartered
  • 2 chipotles in adobo
  • ½ teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 1 large yellow onion thinly sliced
  • 1 or 2 bell peppers sliced into strips
  • 1 tablespoon olive oil

Cover and refrigerate for at least 1 hour or up to overnight for maximum flavor.
